Mercure Perth has re-launched its Beccaria Bar and Restaurant, showcasing a contemporary new finish for guests and revised menu that reflects its prime location in Perth’s CBD.
Melbourne interior design firm Elsie+Betty were tasked with the refurbishment, which features comfortable seating, warm timbers and custom Cintemani pendants.
Executive Chef Sharath Kancharla and his team create flavoursome combinations. In addition to an array of Western Australia wines, craft beers and spirits, diners are invited to taste Mercure’s Flavours from the Cellar wine list which includes a wide selection of quality, regional wines at affordable prices – specially selected in consultation with renowned wine judge and consultant, Jim McMahon.
Before or after dinner, guests can pull up a stool at the Italian Calacatta marble bar and chat to Mercure’s talented bartenders, or enjoy a drink and light nibbles on relaxed lounge chairs.
Situated near Perth’s Central Law Courts, Beccaria Bar and Restaurant is aptly named after innovative Italian criminologist and philosopher, Cesare Beccaria.

Rosie Campbell’s walk-in jerk diner and rum bar is opening this week in the heart of Surry Hills. Rosie’s has been brought to life by The Experience Group Director Graham Cordery and his team from The Soda Factory – Cordery’s debut establishment that opened in 2013.
Blending Cordery’s love of Jamaican island life with the East Coast American direction that has made The Soda Factory a success, Rosie’s will trade from 5pm Monday through Thursday and 11am-midnight Friday to Sunday.
Industry-favourite and winner of last year’s ‘Legend Of The Year’ gong at The Bar Awards, Mike Enright has brought his knowledge and experience to develop Rosie Campbell’s Cocktail and Spirit menu. Stocking around 50 bottles of imported rum including gems from Cuba and the Caribbean islands such as Old London Dock Jamaican Rum (from circa 1910), Rosie’s will also feature beloved American beers and the venue’s locally-brewed beer – Rosie’s Pale Ale and Rosie’s Golden Lager.
Head Chef Adrian Poon has been brought on board to showcase his love for the region and its “bold, spicy, big flavours”. Joining Poon on the menu development team is Jessica Sly. Fresh fruit from the region such as pineapple, mango and coconut are infused through the menus, which is packed with aromatic herbs, warm spices, and pickled vegetables, alongside the American diner influences that run through the group’s DNA.

Developer Greencliff has lured internationally-acclaimed chef Frederic Colin of Brasserie Gavroche in Singapore to open his first Sydney restaurant, Bistrot Gavroche, at Sydney’s newest lifestyle destination, Kensington Street.
Set to open this spring in one of Kensington Street’s distinct warehouse spaces, Bistrot Gavroche will add classic French bistro cuisine to the mix of culinary options available along the street. Echoing the success of Colin’s Singaporean outpost, Brasserie Gavroche, the menu in Frederic’s first Sydney offering will pay homage to recipes from his youth and promises to serve up a selection of timeless French dishes.

The 10th-floor swimming pool is open, which concludes the 18-month refurbishment of the Northern Territory’s only five-star CBD hotel, Hilton Darwin. The Berger Hotel Group, owner of the Hilton Darwin, invested more than $10 million upgrading all 236 guest rooms, lobby hallways and entertainment areas and introducing a new Fitness Centre.

Sofitel Fiji Resort & Spa will expand and update its product offerings for grown-ups this winter with the launch of the Waitui Beach Club – a modern, multimillion new-build leisure concept designed exclusively for adults only.
The Waitui Beach Club (Waitui meaning ‘Salt Water’ in Fijian) commenced construction in February and will officially launch to the public on July 24, with its own pool, champagne bar, restaurant and poolside cabanas. Representing an investment of FJ$3.2 million, the new pool development (within the existing resort), will also introduce a new accommodation category made up of 74 designated Beach Club rooms.
Waitui Beach Club will have a focus on health, with complimentary yoga and tai chi in the morning and a healthy breakfast (when a bed and breakfast package is booked). Other features will include a private, dedicated check-in area, personalised pool butler service, a selection of balanced menus by nutritionist Lucinda Zammit, a 25m lap pool, state of the art gymnasium, plus enhanced room amenities and complimentary sundowner cocktails.

The Rice Den team has evolved the restaurant from its previous incarnation in Chatswood to create a relaxed yet refined atmosphere around a menu of contemporary, composed dishes.
The interior, from Morris Selvatico, is inspired by old Canton fused with modern elements, seen in a mix of aged timbers and industrial furniture. Decoration and greenery soften the polished concrete floor, and open shelves display Asian pottery and bamboo steamers. The feature wall next to the kitchen has Chinoiserie wallpaper over the concrete-look panels that envelop the rest of the interior, giving a warm contemporary rawness with an essence of old Canton.
